Israeli Couscous Pilaf

Ingredients :
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, cut into 1/4-inch dice
  • 3/4 teaspoon ground cumin
  • Pinch of cayenne pepper
  • 1 2/3 cups Israeli or regular couscous
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons coarsely chopped flat-leaf parsley

Cooking Directions :
  1. If using Israeli couscous, bring 2 1/2 cups water to a boil in a medium saucepan; if using regular couscous, reduce amount of water to 2 1/4 cups. Meanwhile, in a large saucepan, heat olive oil and butter over medium-low heat. Add onions, and cook until lightly browned, about 8 minutes. Stir in cumin and cayenne pepper, and saute for 1 minute more.
  2. Stir in couscous, salt, pepper, and boiling water. Cover, and simmer over low heat until tender and water is absorbed, about 10 minutes. Add parsley, and serve.
Yield: 4 servings

Fiesta Chicken Pasta

Ingredients :
  • 2 cups rotini pasta, uncooked
  • 1 tablespoon oil
  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces
  • 2 cups chopped red peppers
  • 1/4 cup KRAFT Zesty Italian Dressing
  • 1 tablespoon chile powder
  • 1/2 cup TACO BELL HOME ORIGINALS Salsa
  • 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
  • 1/2 cup KRAFT Shredded Cheddar Cheese

Cooking Directions :
  1. Cook pasta as directed on package.
  2. Meanwhile, heat oil in large skillet on medium-high heat. Add chicken. Cook and stir 6 min. Add peppers, dressing and chili powder; cook 3 min. or until chicken is cooked through, stirring frequently. Stir in salsa and sour cream.
  3. Drain pasta. Toss with chicken mixture. Sprinkle with cheese.
Yield: 4 servings

Who says pasta has to be Italian? This quick meal will have them asking for seconds!

Notes:
Substitute

Substitute lean ground beef for the chicken. Omit oil. Brown meat and drain before adding peppers.

Chili powder is a powdered seasoning mix that is available in the spice aisle of your grocery store. Despite the name, it's not hot and spicy, but it does add lots of Tex-Mex flavor.

Peanut Thai Noodle Salad

Ingredients :
  • 1/4 cup lime juice
  • 1 cup low sodium soy sauce
  • 1/4 cup honey
  • 1/2 cup PLANTERS Unsalted COCKTAIL Peanuts, coarsely chopped, divided
  • 8 ounces fusilli pasta, uncooked
  • 2 carrots, cut into matchstick strips
  • 1 cup pea pods, cut into matchstick strips
  • 1 small red pepper, cut into matchstick strips

Cooking Directions :
  1. Place lime juice, soy sauce, honey and 1/4 cup of the peanuts in electric blender or food processor container; cover. Blend until smooth; set aside.
  2. Cook pasta as directed on package, adding carrots, pea pods and pepper strips to the boiling water during the last 3 min. of the pasta cooking time. Drain pasta and vegetables.
  3. Reserve 1/4 cup of the peanut sauce; toss pasta with remaining peanut sauce. Cover and refrigerate until ready to serve. Let pasta stand at room temperature 30 min., then toss with reserved peanut sauce and remaining peanuts.
Yield: 6 servings
